Family.Friends.Love. What more could a girl ask for?? Yummy CAKE!




For those of you who don't know, my birthday is on February 14th. My favorite holiday, VALENTINE'S DAY!! When I was little I didn't get the concept of a holiday being on my birthday, so I thought all the stores were decorated for me. I still like to believe that. So pretty much anything pink, red and heart shaped makes me happy in February! Add some frosting and I really can't complain!

I had such an amazing Birthday with friends, family and Jon! Everyone made me feel special from wine tasting, to the Gypsy Den, a duffy boat ride in Newport and even a nice Italian dinner in Laguna. I am blessed and definitely felt the L.O.V.E this year!



For Valentine's Day I decided to give back to Jon and my family (ok and for myself), by making a butterscotch cookie cake with chocolate ganache frosting. It turned out SOOOO yummy.

I had never made ganache before, but it was easy and flavorful! The flavors blend together so well, it just melts in your mouth. Try it out and let me know how you like it!



Big Love Butterscotch Cookie

Cookie
1 1/2 cups flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup butter, softened to room temperature
1/2 cup sugar
1/3 cup packed brown sugar
1 egg
1 teaspoon vanilla
1/2 cup butterscotch morsels
Ganache
3/4 cup heavy cream
1/4 cup butter
3/4 cup semi-sweet chocolate morsels
Heart-shaped cookie pan (about 11 inches wide) and M&M’s
Directions

  • 1. Preheat oven to 350 degrees.
  • 2. Cover heart-shaped cookie pan with non-stick cooking spray.
  • 3. For the cookies, whisk flour, baking soda and salt together in a medium bowl and set aside.
  • 4. Cream the butter and the sugars using a mixer until fluffy.
  • 5. Add egg and vanilla and mix until combined.
  • 6. Add the flour and mix until combined.
  • 7. Stir in the butterscotch morsels.
  • 8. Transfer cookie dough to the pan and spread out evely until the bottom of the pan is covered.
  • 9. Bake for about 8-10 minutes.
  • 10. Remove and cool.
  • 11. While the cookie is baking, you can make the ganache.
  • 12. Heat cream and butter in a saucepan until melted and remove before it starts to boil.
  • 13. Place chocolate morsels in a small bowl and pour cream on top. Let sit for a few seconds and stir until completely incorporated and smooth.
  • 14. Let cool and spread on top of cookie with an offset spatula. (Put in fridge until cools and thickens)
  • 15. To decorate like the photo, you’ll need 85 M&M’s (red or pink or whatever) for the letters. Place candies on the ganache, using the photo as a guide. Use extra M&M’s for the border.
You can use this recipe and change the decor for any holiday!
