Heavenly Cinna-Mini Cakes

Just ate one to get inspiration for the blog! Yes only one!

Sunday night wasn't just a celebration for the celebrities nominated for oscars, but it also happened to be the celebration of more birthdays in my family! Yep you guessed it! It is that time of year, Birthday Season, in the Atkinson household. That means we prepare our tummies for celebration time every month.

So this explains why I have been making yummy sweets and will continue making them until May! Hmmm, maybe after May too! The "Cinnamon Roll" cupcakes that I made for Mom and Caitlin's birthday are just SO good and actually just as easy!

Snicker Doodle or Cinnamon Roll Cupcakes 
Recipe adapted from The Cake Mix Doctor By: Anne Bryn


Cupcakes
1 package plain white cake mix
1 cup whole milk
1 stick of butter, melted
3 large eggs
1 teaspoon vanilla extract
2 teaspoons ground cinnamon
Frosting
1 stick butter
3 3/4 cup confectioners sugar
3-4 Tablespoons milk
1 teaspoon vanilla extract
1 Tablespoon ground cinnamon
* Plus more for decor on top
Directions:

  • Preheat oven to 350 degrees 
  • Line your cupcake tin. 
  • Place cake mix, milk, melted butter, eggs, vanilla, and cinnamon in a large mixing bowl. 
  • Blend for three minutes (stop to scrape once). 
  • Pour into pan and bake for 20 minutes
  • Allow the cakes to cool completely.  
  • Beat butter until fluffy for frosting. Add all other ingredients, continue to beat until desired consistency.



I have used this recipe about five times previous to this occasion. It is actually really easy because it is a doctored up box cake mix, and topped with homemade cinnamon buttermilk frosting. On the recipe these sweet treats are titled "Snicker Doodle Cupcakes", but after making them this time I have decided they taste more like cinnamon rolls because of the flavor and consistency of the frosting. Beware making these will turn family, friends, and guests in to ravenous beasts! I watched 24 cupcakes slip away down into the bellies of my loved ones. At the end of the night everyone was feeling happy, and not only because the Hurt Locker won.
